Scaling changes the amounts, not the cooking temperature or time. See how to scale a recipe for why.

125 g 1 cup all-purpose flour

Volume-to-weight conversions use standard densities. A cup of flour (125 g) is lighter than a cup of sugar (200 g) — that is why the ingredient matters.

How to scale a recipe

Three simple steps — or let the tool do it for you.

Find the multiplier

Divide the servings you want by the servings the recipe makes. From 4 to 6 servings, that is 6 ÷ 4 = 1.5.

Multiply every ingredient

Apply the multiplier to each amount. 200 g flour × 1.5 = 300 g.

Frequently asked questions

How do I scale a recipe up or down?

Divide the desired servings by the original servings to get a multiplier, then multiply every ingredient amount by it. For example, going from 4 to 6 servings gives a multiplier of 1.5, so 200 g becomes 300 g. Our scaler above does it automatically.

Why does the ingredient matter when converting cups to grams?

Because a cup measures volume, not weight. A cup of flour weighs about 125 g while a cup of granulated sugar weighs about 200 g. Selecting the right ingredient gives an accurate conversion.

How many grams is 1 cup of flour?

One US cup of all-purpose flour is about 125 g. Bread flour is closer to 127 g and cake flour about 114 g.

Do I scale cooking time too?

Not directly. Scaling amounts usually keeps the temperature and time the same, though larger batches may need a little longer and deeper pans. See our scaling guide.
